Cereal Butter Chicken

Today, I am trying a recipe from Rita's Vibrant Kitchen which she in turn adapted from here.

I am always lazy to measure everything in exact quantities, and I only have this cereal at home, hence I used 1 packet of it.

Here's the steps I copied for easy reference:

Ingredients (2-4 persons):

Cereal mix (mix them all well in a bowl and set aside):

  • 3/4 cup Nestum cereal (original flavour) (I used 1 packet of 3 in 1 which i think is the culprit for the sweetness.)

  • 1/2 tsp salt

  • 1 1/2 tsp sugar

  • 1 1/2 tbsp milk powder

Chicken

  • chicken breast, sliced into bite size cubes300g (I used 400g of chicken thigh, I am guessing after I debone it it's actually less than 300g of meat)

  • 1 - 2 tsp soy sauce

  • 1 - 2 tsp sesame oil

  • Few dashes of pepper

  • 1/2 egg, beaten

  • 1 1/2 tbsp cornflour

  • Some oil for shallow frying

  • 30g (2 tbsp) salted butter

  • 1 bird's eye chilli, thinly sliced

  • 6-10 sprigs curry leaves, without stalks (rinsed & dried) (I used only 3 stalks cos it seems like alot already)

  1. Marinate chicken breast with soy sauce, sesame oil & pepper for at least 1 hour. (According to my mil, chicken taste better if you marinate it overnight. I put it in the fridge and seal with cling wrap.)

  2. Add beaten egg, mix well then coat with cornflour. (Tips for noobs, this is best done by putting cornflour in a bowl and rolling the chicken in it.)

  3. Heat pan with some oil, fry chicken till brown and drain.

  4. Heat butter till bubbling. Add curry leaves and fry over medium heat until fragrant.

  5. Reduce heat to low. Add cereal mix and stir till lightly golden. (Please watch the fire as my cereal turn slightly black after I turn around to pick up my chicken.)

  6. Add chicken and toss till well mixed, turning off heat when cereal turn golden brown.

Taste: 3/5 It's not zi char standard but my supportive husband says that it's very nice. Slightly sweet though, I suspect it's cos my cereal already has milk in it. AND I FORGOT THE CHILLI PADI. I think you can add in the chilli padi in step 4 or 6.
