Dairy Free Mushroom Soup/Mushroom Udon

Ingredients

  • 1 tbsp oil

  • 1 knob of butter

  • 1 large onion (looks like yellow onion), diced

  • 3 cloves of garlic, diced

  • 5 swiss brown mushrooms, sliced

  • 1tbsp cornstarch

  • 200ml chicken collagen stock

Steps

  1. Add oil and butter to pot

  2. Add in onions, garlic, vegetables and mushroom

  3. Add in cornstarch. Stir.

  4. Add in chicken stock and simmer for 10mins.

  5. Blend.

Taste: 5/5

Quick to prepare and extremely tasty! Throw in some udon and it becomes an awesome meal!
