Spanish Garlic Wings

From the remnants of my last purchase of 2kg wings, I am attempting yet another Googled recipe. Today it's from Easy Food Recipes For Beginners To Make At Home. Honestly, what better Youtube channel for a noobcook than one that has the words "Easy" and "Beginners" all in it's title!

Ingredients
1x Garlic (I think I added almost 3/4 tbsp of garlic.)
Olive oil (I added sparingly.)
Black pepper & Salt (I added sparingly.)
1 cup of white wine (I omitted this as I don't have it and can't find a suitable replacement.)
Chopped thyme and rosemary (I omitted this cos I forgot amidst all the oil splaterring. =( I suspect the chicken will taste alot nicer with the herbs infushion.)
Steps
Season the wings with salt and pepper
Add oil to a pan
Cook the garlic at very low temperature so that it does not brown. Remove garlic from oil after 2 mins. (I think you have to wait till the oil is a little warm.)
Put the pan on the fire on high heat this time. Add the wings in carefully and fry for 10mins.
After the wings have browned, throw in the garlic for 15secs
Add some white wine and cook for another minute (so the alcohol evaporates) to make a delicious sauce.
Add your herbs

Despite omitting like almost half the ingredients, I am surprised that the wings actually tasted quite good. They are really simple to prepare and the wings smelt (and tasted) so good with the garlic.
I did however, scald myself a few times from all the horrifying splatter but I'm sure it's no kick for adept fryers.
Any tips on frying wings?
