Banana Cake / Bread

Update 19/03/17: So my husband (a fan of chocolate), suggested we add some chocolate chips into the mix. We did, and...., it was the most AMAZING move! Do it too bakers!
As I am typing this, the beautiful banana cake/bread smell is wafting through my nose. Oh yumms!
Today's recipe I got it from The Domestic Goddess Wannabe (i think someone shared it on FB) and according to Diana, this is the kinda baking for noobs (I LOVE!) and totally fail proof!
Ingredients
2 large eggs
4 large bananas, mashed
125g unsalted butter, melted (PS, melted like use a pot over heat and melt it. I stupidly mis-did it as room temperature on my first attempt!)
175g plain flour
150g caster sugar I used about 140g sugar cos I don't like it too sweet, will continue to lower over my next few experiments to get the optimum between delicious-ness and health!
2 teaspoon baking powder
½ teaspoon bicarbonate of soda
½ teaspoon salt
1 teaspoon vanilla extract
80-100g dried cranberries
1 tablespoon chia seeds
Steps
In a big bowl, stir together melted butter and sugar. If you are using the above portions directly, I suggest using one of those mixing bowls as the stuff really adds up to quite a bit.
Once the butter and sugar have been mixed (there will still be gritty bits), add the eggs, one at a time, and beat each into the mixture using a wooden spoon or spatula. As it mixes, the egg will change the consistency of the mixture. Make sure you work rather quickly otherwise the eggs will scramble because of the residual heat from the butter.
Add the mashed bananas and vanilla extract and mix.
Add the chia seeds and cranberries and stir some more to mix. Really like it that she added chia seeds to the recipe. For those who don't already know, apparently chia seeds are one of those super foods and they have negligible effects on the taste too! Just don't add too much cos it leaves a funny feeling in the mouth if you add more than the above. I know because greedy me added like twice the amount of chia seeds on my first round. =(
Fold the sifted dry ingredients into the mixture. Do not over mix – just stir until the flour has just been moistened. Basically what I did was to mix it in till there isn't anymore white-ish powder.
Pour the batter into a lightly greased and lined 9×5-inch loaf pan. I used 2 of those small ones cos it's easier to give away and also there's more top layer crust! =)
Bake at 170°C for 45-55 minutes, or until an inserted skewer emerges cleanly. I put mine in the oven for 45mins and it came out beautifully. =)
Allow the banana bread to cool completely in the pan.
Then simply slice, and serve!
There you go! Yet another easy to make recipe that you can totally prepare at night for breakfast the next day.

Most of the people who tried it loved it! I find it slightly too sweet but that's just me and more importantly, it's really so easy to make! Tip: Taste best when consumed when warm or within the next day else it may dry up a bit.
