This egg bread is a traditional Korean street food and a must try when visiting Seoul! If you are not visiting Korea anytime soon, make this at home!
On top of that, this is totally a recipe that will blow you away! The main reason is that it's really super tasty, extremely easy and super fast to make. Insane right?
(PS, it also helps you finish up the cheese in your fridge.)
I came across this recipe on Maangchi's (the best site to have if you dig Korean food) website. You can find the original recipe with extremely helpful video here.
Ingredients
1 tablespoon unsalted butter, melted
3 tablespoons sugar
a pinch of salt
1 teaspoon baking powder
½ teaspoon vanilla extract
½ cup all purpose flour
½ cup milk
4 eggs
1 teaspoon cooking oil
1 stick of mozzarella cheese (optional), cut into 6 equal-sized small pieces if used
Steps
Make batter by combining butter, sugar, salt, baking powder, vanilla extract, 1 egg, flour, and milk. Whisk until smooth.
Preheat the oven to 400°F (about 200°C).
Brush the bottom and the sides of 3 mini loaf pans (approximately 4 x 2 x 1½ inch) with cooking oil. (I used some small cake tins and I only manage to make 2 계란빵 but I believe you can definitely use any cake tins you have. I saw some bakers using muffin tins to make this!)
Fill each pan about ½ full with batter, dividing it into equal portion (About 2-3 or more depending on your tins)
Put 2 pieces of cheese into the batter, on the edges of the pans, leaving a space in the centre.
Crack an egg onto the centre of the batter in each pan.
Place pans on the middle rack of the oven and bake for 13 minutes, and closer to 15 minutes if you prefer a solid egg.
Take out of the oven and serve hot!
Taste: 5/5
I think I will rate this a 7 even though mine didn't come out bread/cake like (I am not sure why!). Definitely a keeper!
Will try it again next time to see where I failed.
